Up to this point Bottlefork Chicago is the only establishment under the Rockit Ranch Productions umbrella that we have yet to imbibe. Their name reflects staying true to the idea that there be a fusion between the bar and the kitchen. This mindset is reflected in today’s offering of a Bacon-washed whiskey + apricot + lemon + egg white + angostura cocktail. The featured spirit is Collingwood Canadian Whiskey; the team arrived in town from their headquarters just an hour prior.

Collingwood is the premium whiskey offering from Brown-Forman, one of the largest wine and spirits companies in the U.S. Their roster includes Canadian Mist, Jack Daniels and Woodford Reserve among others.

Unlike American Whiskey, which needs to be 51% corn and aged in new oak barrels, the Canadians are a little less restrictive with what constitutes Canadian Whiskey. Collingwood could be a blend of rye, corn and wheat mash with a  9% blend of cherry and wine. It’s actually aged in second use Jack Daniels barrels. The result is lighter and dare we say more versatile than its American counterpart.

While Bottlefork Head Bartender, Adam Kamin prepped his take on the Whiskey Sour called Look Out Below we all took a moment to admire how both Bottlefork and Brown-Forman were featured in back-to-back issues of Beverage Media Magazine last October and November.

Bottlefork can be found quite often on ‘best of’ list when it comes to memorable brunches and cocktails.

Collingwood Canadian Whiskey is currently available in Kentucky, Detroit and Chicago. The spirit is produced in Collingwood, Ontario at  Canada’s longest continuously owned and operated distillery.
