The super jam of 25 breweries, music acts and taco stand popup moved from the Chicago location to their stunning Milwaukee production facility. Located in historic brewing district with an insane barrel capacity, vaulted ceilings, rooftop and patio, it’s about as scenic a space as we’ve experienced all year.
Pilot Project is a launch pad for creativity. We all know Funkytown, a crew that is slowly becoming one of our all time favorites. But the ever changing lineup of experimental projects and new partners makes Pilot a most interesting destination.
This brewery incubator was launched as a collaborative space and captures the synergy between Chicago + Milwaukee in a way that feels organic. It’s the 2nd year in a row we felt inspired to make the quick 90 min trip up from the North Side.

Our favorite pour was from Cervecería Paracaidista. The Original Mexican Gypsy Brewery is now releasing beers at Pilot. Apapacho- A Love Letter To Chicago. West Coast Pilsner with four different hops (Loral, Eclipse, Nugget + Chinook). Refreshing and eclectic a beer that felt familiar and comforting from a crew we’ve never heard of.
Eight Pilot Project affiliated brands along with 20 guest breweries made for an exceptional old school beer fest completely worth the trip up.
